You’ll probably want to revisit this crockpot buffalo chicken recipe on Sunday. Not only is it a great dish to serve during football games, but by the time we reach this particular Sunday, you may just want anything besides Thanksgiving leftovers when it feels as if you can’t eat another bite of turkey! It’s easy for me to think and say I could eat turkey, mashed potatoes and gravy and green beans every day; however, after three family get togethers and a few lunches and dinners of holiday leftovers I might be singing a different tune 🙂 In other good news, if you’re the host who has been planning, prepping and cooking all week you can take a break with this recipe! The crockpot is a wonderful invention making mealtime easy for busy families everywhere! I love using the crockpot on weekdays especially, because there’s nothing better than coming home from work and smelling dinner ready to be served!
These shredded buffalo chicken sandwiches turned out really well; they are a perfect alternative to our beloved, but quite unhealthy, chicken wings! Hailey, her friend from school and my husband all approved and asked for this dish to please be made again! You can choose a wing sauce that meets your ‘spicy preference’ and top them with your choice of blue cheese, ranch, coleslaw or any other great addition you like! If you’re making them for a group on game day, serve the chicken on sliders to make a yummy appetizer! Now, seeing as it’s Thanksgiving Eve, I’m getting back into the mind set of turkey and mashed potatoes and gravy as I anticipate the delicious food to be had tomorrow along with some precious family time. Crockpot Buffalo Chicken
Ingredients:
- 6 boneless, skinless chicken breasts
- 1 (12 oz.) bottle buffalo wing sauce (I used Frank’s)
- 2 Tbsp ranch seasoning mix
- 2 Tbsp butter (optional)
Instructions:
- In a small bowl, mix wing sauce and ranch seasoning mix until well combined.
- Add chicken breasts to the crockpot. Pour sauce over chicken. Cook on low for 6-8 hours.
- Once cooked, shred chicken and add butter. Stir to melt and mix well.
- Serve on buns, lettuce wraps or sliders with your choice of toppings.
