Lunch

Roasted Butternut Squash Soup

A couple weeks ago we made the small trek over to St. Clairsville to visit my Great Uncle’s pumpkin farm. I wouldn’t just call it a pumpkin farm though. You’ll also find gourds, mums, popcorn (red ears of corn that is, to make popcorn), indoor and outdoor home decor (I sure did want to buy the cute wooden wishing well) and vegetables like, you guessed it, butternut squash. It’s been a while since I’ve been to his house. Our last visit was for a family reunion I think the year my husband and I got married; if you’re keeping track that’s Continue reading

Chickpea Salad

It feels a little like I’m meeting a deadline just in time with this post. Although it’s been Fall in the retail world for about two months now, the rest of us still have two more days of summer to embrace which means enough time for me to share a poolside, cookout worthy recipe. Summer was pretty generous to us when you look at the big picture. Hailey danced in her first recital, we were lucky enough to get a dock at our local lake to park our boat for the season, I learned valuable lessons in my first year of gardening (that’s a nice way of saying my tiny garden wasn’t winning any awards this year, but I’m confident about round two), we ventured up to lake Erie to spoil our sweet niece who turned one, we took an amazing Continue reading

Crockpot Buffalo Chicken

You’ll probably want to revisit this crockpot buffalo chicken recipe on Sunday. Not only is it a great dish to serve during football games, but by the time we reach this particular Sunday, you may just want anything besides Thanksgiving leftovers when it feels as if you can’t eat another bite of turkey! It’s easy for me to think and say Continue reading

Chicken Caesar Pasta Salad with Homemade Dressing

Another Summer salad? You bet! If I make enough surely the Summer-like weather we dream about all Fall, Winter and Spring will come back and stay a while….right? I’m hoping, because we’ve had a bit too much rain for my liking this Summer. I’m certain my flowers could even go for a break; don’t worry Mother Nature, if we have a few sunny days in a row I promise Continue reading

Egg Salad with Radishes & Chives

Welcome to July, my friends! I’m happy to report that Summer seems to be returning here in Ohio; an early Fall tried to sneak in for the past couple weeks with rain and cooler temperatures…take it easy, Fall. Your time will come all too soon enough! With the pleasant return of sunshine and warmth, I figured it was perfect timing to share another great Continue reading

Pasta with Fresh Tomatoes and Basil

and more! It was a little tricky to decide on a title for this dish, because if I were to explain it completely it’s pasta tossed in olive oil with fresh tomatoes, basil, garlic and parsley! Luckily, the long name is the most difficult part of this perfect Summer lunch or dinner! It’s a very Continue reading

Grilled Chicken and Berry Salad

Although the ever changing Ohio weather is starting to go downhill today, we’ve had some really nice Summer like days lately and it’s getting me in the mood for great Summer food dishes! I’ve made salads with fruit in the past, but this is  Continue reading

Southwestern Chopped Chicken Salad

Salads are a favorite in our family, even my stepdaughter loves salad…you know, as long as it only has cheese and carrots on it and Italian dressing to top 🙂 I slowly try to sneak more into her salads, but so far I’ve only been successful with adding carrots. I’ll take it for now! Back on Valentine’s Day, I added Continue reading

Grilled Margherita Sandwich

Whew! Finally time to sit down with a cup of tea, relax and do some blogging. This is my second attempt at this; my first attempt was a false alarm as I was about to sit down and remembered the clothes in the washer needing to go in the dryer…after the laundry in the dryer was taken out and folded, oye! It’s been a busy Saturday, but a fun filled one spent as a family. With grocery shopping, practice for Hailey at the archery range, a trip to the movies, cooking and cleaning, I was happy to have a simple and quick recipe to try during our free time at lunch! Continue reading
