This dip is a go-to for me whenever I’m hosting a party or need to take some appetizers to someone else’s party! I always receive great feedback on this and actually never see it at other parties so I must share and allow you all to enjoy in this healthy goodness!
I’m also pretty excited about this new glass bowl I just bought from Crate and Barrel! It’s a little different in shape and perfect for foods like this one! It doesn’t take a whole lot to excite me I suppose 🙂 If you’re a bit the same way and like it, check it out here! They have three different sizes, perfect for snacks or even used as decor around the home. I’ve said this before, but I’ll repeat it again; I just love Crate and Barrel! I’m not sure if it’s good or bad that one of their locations is 10 minutes from our home!
Anyway, back to the dip. Lots of good for you ingredients in this dish!
You want to mix the dry ingredients and the dressing ingredients separately. You’ll have black beans, corn, tomatoes, green onion and cilantro in one bowl and olive oil, red wine vinegar, garlic, cumin, salt and pepper in another bowl.
Once the two parts are mixed, simply pour the dressing over the bean and corn mixture and toss to coat evenly! The scoop tortilla chips are best to serve with this. If you like the spice cumin as much as I do, I’ll tell you that I sprinkle a little extra on after it’s all mixed, yum!

Black Bean & Corn Dip
Ingredients:
for the corn and bean mixture…
- 1 can Corn (I use White Shoepeg corn)
- 1 can Black Beans
- 2/3 cup chopped Cilantro
- 8 Green Onion stalks
- 6 Roma tomatoes, sliced
for the dressing…
- 1/4 cup Olive Oil
- 1/4 cup Red Wine Vinegar
- 2 Cloves minced garlic
- 3/4 tsp Salt (I don’t use this full amount)
- 1/8 tsp Pepper
- 1 tsp Cumin
Instructions:
- Mix first 5 ingredients together in a large bowl.
- Combine dressing ingredients in a separate, smaller bowl.
- Pour dressing over the bean and corn mixture and toss to evenly coat. Sprinkle a little extra cumin on top if desired.
- Serve immediately or keep in refrigerator until ready to use (I usually make this an hour or so prior to serving)
*Two Avocados can also be added to this dip!
