Here I am at the end of the day writing about the start of my day. Before I get to the very tasty Egg and Avocado Toast, I have to jot down some highlights of my day. I hope you didn’t get too excited just now, because it’s nothing really extraordinary, but little things made me smile over and over again today. I made some Easter egg nest treats this morning (a post on that is yet to come) and Hailey loved them and gave me a hug just for making them and letting her have one for breakfast! That’s hug #1. Next on the list was taking Hailey to get her hair cut; she loves going to the salon, because the stylist we both go to is really great; Hailey always enjoys the experience and loves the look of her hair afterwards. On our way there I asked if she still wanted to get short bangs, because this is something she has talked about doing for a while. I was surprised when she said no and had to keep from laughing when she told me why… “I don’t want bangs anymore; I just don’t look as good with bangs now that I’m older” I didn’t realize she had gotten so much older over the past few months 🙂 Of course, I told her how beautiful she looks with any style. I think somewhere along the line she has associated bangs with being younger! So the appointment goes perfectly as always and she’s smiling ear to ear. Oh and hug #2 for taking her to the salon. We went to Panera Bread next to pick up lunch to take home and she said her cheeks were starting to hurt from smiling so much, such a silly girl! Waiting in line to order at Panera…hug #3, just because she likes giving hugs and tells me how awesome and nice I am! Have I made it clear how much I love this little girl? She is so sweet and thankful for everything we do for her. I’m going to pull a Seinfeld here in effort to keep this short story from turning into a long novel and say yada yada yada the afternoon and evening were just as great! We spent quality time with each other, visited the bookstore and had a yummy dinner together as a family. I couldn’t help but smile to myself thinking how lucky am I. There are plenty of fun things I want in life, but I truly have everything I need right here. Blessed ❤

Avocados are super healthy; add them to your diet! This is a breakfast that can be made in minimal time and is healthy all around with avocado, organic free range eggs and whole grain bread. I also had a favorite side of mine with it this morning, a sliced apple dipped in almond butter. It was a great start to my day and I hope you enjoy it as well! Check out the recipe below!
Egg and Avocado Toast
Ingredients:
- 1 Piece Whole Grain Bread
- 1 Organic Egg
- 1/2 Avocado, sliced
- 1/2 Tbsp Milk
- Butter, for coating skillet
- Pepper, to taste
Instructions:
- Halve and slice avocado to set aside.
- Crack one egg into a bowl, add milk and whisk.
- Add needed butter to skillet over medium to low heat. Pour whisked egg into the skillet and cook, flipping and mixing occasionally until fully cooked.
- Toast piece of bread in the toaster for desired crispness.
- Remove bread from the toaster, top with avocado (mashing slightly if needed) and add scrambled eggs over avocado. Season with pepper to taste.
