I’m always looking for new healthy recipes and came across this one recently on Pinterest. I’ve never tried eating or cooking with chia seeds and didn’t realize just how much nutrition they pack! Do you have any idea how healthy these little seeds are for you? It’s worth a Google search to read the details on the antioxidants, fiber, protein and omega 3 fatty acids they contain and how they promote good health. This pudding recipe was my first attempt at making something with chia seeds and I’m happy to say it was successful! The pudding is incredibly easy to make and has a great taste, especially when topped with berries and almonds! My husband approved as well and I plan on making this again next time we have my step daughter with hopes she’ll enjoy it too!
The only thing I need to look for now is some cute miniature jars to serve the pudding in. My poor kitchen is running out of space for fun things like that though! I’m one of those slightly off beat women who enjoys buying items for the home more than clothes and shoes! Call me crazy, but I think I got a lot of traits from my Grandma and my Dad so I feel pretty great about it 🙂

Vanilla Chia Seed Pudding
Ingredients:
- 1 cup Vanilla flavored unsweetened Almond Milk
- 1 cup Plain Greek Yogurt
- 2 Tbsp Pure Maple Syrup
- 1 tsp Pure Vanilla Extract
- 1/8 tsp Salt (I was conservative even with this small amount)
- 1/4 cup Chia Seeds
- 1 cup Strawberries, rinsed and chopped
- 1 cup Blueberries, rinsed
- 1/4 cup Sliced Almonds
Instructions:
- In a medium-sized mixing bowl, gently whisk the almond milk, yogurt, maple syrup, vanilla, and salt until just blended. Whisk in the chia seeds; let stand {stirring occasionally} for 30 minutes.
- Give the pudding one final good stir, to distribute the seeds if they have settled, before covering with plastic wrap. Refrigerate overnight.
- The next day, spoon the pudding into 4 small bowls or glasses and top with berries and almonds.
- Serve immediately. Enjoy!
