Healthy Green Smoothie

Well, my first attempt at some green colored goodies for the upcoming St. Patrick’s Day didn’t go quite as planned! I had the idea to use my recipe for Red Velvet Cookies, but turn them green for the holiday! How cute, right? I’m not sure if it was because I didn’t use enough food coloring at the right time or if maybe green just doesn’t work in this situation, but they were a fairly ugly brown color and didn’t exactly look appetizing! Hey, you win some you lose some! So as I cleaned up from that unfortunate outcome, I decided it was a sign to keep it healthy for St. Patrick’s Day and I

started mixing up some delicious ingredients for a smoothie! My favorite part about this smoothie is all you really taste is peanut butter and banana when there’s actually a whole cup of spinach mixed in (and we’re back to winning)! This is such a great way to sneak in a serving of vegetables during your busy day!

The smoothie is also really easy to make so you are running low on excuses to not eat more fruits and vegetables 🙂 I must say, I enjoyed this as much as I would have enjoyed a cookie and it was definitely better for my body! Here’s to hoping I inspire some more healthy decisions this green holiday!

Healthy Green Smoothie

Ingredients:

  • 1/2 Banana, sliced and frozen
  • 1 cup Spinach leaves
  • 1 tsp Honey
  • 1 tsp Peanut Butter
  • 1/2 cup Milk
  • 1/4 cup Plain or Vanilla Greek Yogurt (I used plain)

Instructions:

  1. Ready for this? Add all ingredients to your blender and mix until well combined.
  2. Pour into a glass and enjoy!
