Turkey, Bean and Spinach Soup

Yesterday was a day best spent inside, cozy and warm; it definitely felt like Fall with gloomy skies and wind that was quite chilly! Since we live in Ohio though, today is the exact opposite and it almost feels like Summer again (which I’m okay with as you can guess)! Yesterday was a definite soup making kind of day and Continue reading

Pineapple Green Smoothie

As I continue to try new smoothies, I decided it was time they have their own tab on my blog! If you want to check out past creations, just click¬†here! This particular smoothie has a fun little story behind it! I made these in the afternoon with no real intention of asking Hailey to try one, because I didn’t think she would based on the green color. Funny enough, Continue reading

Baked Eggs with Spinach and Tomato

Can I just share my excitement for the official arrival of Spring for a quick minute? Oh how I’ve been waiting for my favorite seasons to come back around! Today is a lovely sunny day and expected highs are in the mid 60’s this afternoon! Fresh air blowing through the open windows of our home? Yes, please! I will be enjoying today to the fullest, because although it’s Spring I do still live in Ohio and the high for tomorrow is in the 40’s…sigh! Still, moving into a new season filled with great weather and pretty flowers to come makes me happy! To start the beautiful day, I wanted to make a Continue reading

Healthy Green Smoothie

Well, my first attempt at some green colored goodies for the upcoming St. Patrick’s Day didn’t go quite as planned! I had the idea to use my recipe for¬†Red Velvet Cookies, but turn them green for the holiday! How cute, right? I’m not sure if it was because I didn’t use enough food coloring at the right time or if maybe green just doesn’t work in this situation, but they were a fairly ugly brown color and didn’t exactly look appetizing! Hey, you win some you lose some! So as I cleaned up from that unfortunate outcome, I decided it was a sign to keep it healthy for St. Patrick’s Day and I

Garden Style Lasagne

So here’s how this one has gone….I pinned a recipe for Vegetable Lasagne, kept looking at it from time to time and this weekend (several months later) finally decided to spend the needed time in the kitchen to make it. Sometimes the number of steps in a recipe can be a bit intimidating, but once you break it down and actually go through the process it’s nothing too complicated, just time consuming. Yesterday it snowed pretty much all day (I think we ended up with about six inches of snow on the ground) so it was the perfect Saturday to do some Continue reading

Spinach and Tomato Tortellini

As an Italian, and a fan of delicious dishes in general, I love pasta! This one in particular was so simple to make and actually surpassed my expectations on taste! It’s creamy texture and fresh ingredients make it a scrumptious meal! My husband even commented on how good it was without me having to ask…yep, added to dinner menu! Continue reading

Mushroom Florentine Pasta

I love trying new recipes and with working 5 days a week I am always looking for simple, yet delicious recipes! Oh and I love pasta, I am Italian after all! The dish pictured above is a scrumptious Mushroom Florentine Pasta! It was easy to make and I could see using the sauce for other pastas as well; it’s very similar to an Alfredo sauce! Continue reading
