Pineapple Green Smoothie

As I continue to try new smoothies, I decided it was time they have their own tab on my blog! If you want to check out past creations, just click here! This particular smoothie has a fun little story behind it! I made these in the afternoon with no real intention of asking Hailey to try one, because I didn’t think she would based on the green color. Funny enough, she walked into the kitchen after the smoothies were made (recipe makes two), ingredients were put away and they were just sitting on the counter! She asked what it was and I told her if she liked pineapple she would probably enjoy it…hey, true story! Surprisingly, she decided to try it and said “Mmm! this is yummy!” So, of course, I let her go on her happy way as she unknowingly drank some healthy vegetables in her ‘fruit’ smoothie! Once she drank a little more than half her smoothie, the question was finally asked “if this is pineapple, why is it green?” At this point I had to tell her the ingredients of smoothie (pineapple, water, ice and yes…avocado and spinach) and in return she slid her cup across the table insinuating that was enough for her. But then I told her because she was drinking it I was going to give her a break by not making her eat vegetables with dinner. She promptly took her smoothie back and finished it! Kids 🙂

This is a very simple smoothie to make with a great tropical flavor! It’s also the first green smoothie I’ve tried with multiple vegetables and nothing like milk or yogurt added so I was pleasantly surprised when it still had a fruity taste! Pineapple Green Smoothie

Ingredients:

  • 1 cup water
  • 2 cups fresh or thawed pineapple chunks
  • 1 medium ripe avocado, halved and pitted
  • 2 cups spinach
  • ½ cup ice cubes

Instructions:

  1. Add all ingredients to blender in the order listed above. Blend on high until smooth.
  2. Divide between two glasses and serve immediately.
