Egg Salad with Radishes & Chives

Welcome to July, my friends! I’m happy to report that Summer seems to be returning here in Ohio; an early Fall tried to sneak in for the past couple weeks with rain and cooler temperatures…take it easy, Fall. Your time will come all too soon enough! With the pleasant return of sunshine and warmth, I figured it was perfect timing to share another great Continue reading

Pasta with Fresh Tomatoes and Basil

and more! It was a little tricky to decide on a title for this dish, because if I were to explain it completely it’s pasta tossed in olive oil with fresh tomatoes, basil, garlic and parsley! Luckily, the long name is the most difficult part of this perfect Summer lunch or dinner! It’s a very Continue reading

Universal Studios & The Wizarding World of Harry Potter

Well…we’ve arrived back home from what seemed to be a one day vacation though we were gone for five. It’s quite evident how the saying “time flies when you’re having fun” came to be when you go on trips like our most recent one to Universal Studios in Orlando, Florida; we had a wonderful time and made some unforgettable memories! I want to document our trip for my family’s enjoyment, but want to keep my amazing readers in mind as well! If you’re planning a trip to Universal  Continue reading

Broccoli Cauliflower & Carrot Salad

Broccoli salad is another popular side dish at all the Summer cookouts and many of our family get togethers, but I have never tried making it. I recently stumbled upon a recipe for Broccoli, Cauliflower and Carrot salad and as I’m expanding our menu with great new Summer side dishes I decided it was the perfect time to give it a whirl! This particular recipe has a great mix of Continue reading

Creamy Coleslaw

One of many things I love about Summer is switching it up a bit with sides to our dinners! I try to keep from cooking the same meals over and over, but our side dishes tend to always be rice and steamed vegetables or potatoes and a salad. We do keep it exciting though with multiple kinds of rice and potatoes cooked different ways (are you catching the clever sarcasm accompanying that sentence?) 🙂 One dish in particular I’ve been wanting to try is coleslaw; a perfect side for those Summer BBQ dinners on the deck! Continue reading

Easy Caribbean Jerk Chicken

You know where the best jerk chicken is in the world? At an amazing resort in Montego Bay, Jamaica where it’s smothered in delicious jerk seasoning and grilled fresh by the pool each afternoon! My husband and I ate this nearly every day on our honeymoon, because it was just that good! We still wonder why we didn’t bring a jar of the seasoning home with us, but I suppose that’s as good of reason as any to go back…right? 🙂 Continue reading

Make Vacation a Surprise

As a kid, I was lucky to go on a family vacation every year! I know vacations can be expensive; they fly by and a week or two after you get back you almost feel like you never left, but…and this is a BIG but, the memories you make and the places you see are priceless! Of course, this is simply my opinion and I completely understand the joy of being home too 🙂 Continue reading

Peach Raspberry Smoothie

As mentioned in my Pineapple Green Smoothie post, the next smoothie being added to the collection is a lovely Peach Raspberry one! Four simple ingredients make for one tasty drink! I recommend using a fresh, sweet peach and frozen raspberries or using all fresh fruit and adding ice to achieve that ‘smoothie thickness’. Your only other Continue reading
