Healthy Green Smoothie

Well, my first attempt at some green colored goodies for the upcoming St. Patrick’s Day didn’t go quite as planned! I had the idea to use my recipe for Red Velvet Cookies, but turn them green for the holiday! How cute, right? I’m not sure if it was because I didn’t use enough food coloring at the right time or if maybe green just doesn’t work in this situation, but they were a fairly ugly brown color and didn’t exactly look appetizing!
