Baked Eggs with Spinach and Tomato

Can I just share my excitement for the official arrival of Spring for a quick minute? Oh how I’ve been waiting for my favorite seasons to come back around! Today is a lovely sunny day and expected highs are in the mid 60’s this afternoon! Fresh air blowing through the open windows of our home? Yes, please! I will be enjoying today to the fullest, because although it’s Spring I do still live in Ohio and the high for tomorrow is in the 40’s…sigh! Still, moving into a new season filled with great weather and pretty flowers to come makes me happy! To start the beautiful day, I wanted to make a Continue reading

Healthy Green Smoothie

Well, my first attempt at some green colored goodies for the upcoming St. Patrick’s Day didn’t go quite as planned! I had the idea to use my recipe forΒ Red Velvet Cookies, but turn them green for the holiday! How cute, right? I’m not sure if it was because I didn’t use enough food coloring at the right time or if maybe green just doesn’t work in this situation, but they were a fairly ugly brown color and didn’t exactly look appetizing! Hey, you win some you lose some! So as I cleaned up from that unfortunate outcome, I decided it was a sign to keep it healthy for St. Patrick’s Day and I

Homemade Pie Crust and Pi Day Fun

We got Hailey for the weekend after work on Friday and after some celebrating at school she was all excited for Pi Day on March 14th! She requested I make some pie for the ‘holiday’. Keep in mind, this request is coming from a girl who typically won’t eat pie, not the good fruit pies anyway! It’s the only way I can truly tell she’s not directly related to me πŸ™‚ Since I wanted to make something I knew she would eat and love I decided on Continue reading

Engagement Gift for the Bride to Be

I absolutely love writing about my own wedding and reliving those memories in a way that will preserve them forever, in words that tell a story. However, I’m really excited to have another wedding to write about now too, my best friend’s wedding! Michelle. We met in 7th grade…she french braided my hair for track practice and the rest is history! This is the girl who’s always been there for me; she’s truly my best friend for life! You know, that person who will Continue reading

Green Tea Blueberry Banana Smoothie

Looking through my recipe box today as I tried to decide what to make for dinner, I stumbled upon a recipe for a green tea blueberry banana (got all that?) smoothie that I remember writing down months ago! The poor recipe has sat in my box forgotten about day after day! I hadn’t made breakfast yet so I decided this would be the perfect healthy start to my day! Continue reading

The Cake to your Coffee

Surprisingly, today was my first time making coffee cake. I remember this dessert sitting on the stove from time to time at my parents house growing up and oddly enough can picture it perfectly with the main lights turned off and just the stove light left on; it’s funny how some (random) memories stick around. I was very lucky growing up in a beautiful home where my parents always cooked delicious meals and baked wonderful desserts! Quick side story? Continue reading

My ‘Go To’ Appetizer: Veggie Pizza

I have found this veggie pizza to be quite the ‘crowd pleaser’ at parties and within our home! I’ve made it several times and much like the s’more cups, I never have leftovers to bring home or put back in the fridge.Β Bonus, even my picky step daughter likes this one…as long as there’s no cauliflower on her pieces that is! The other great thing about this veggie pizza is Continue reading

Mini S’more Cups

I was first introduced to these delicious treats by my Grandma and they were certainly added to my list of many great recipes from her! The s’more cups are simple to make and the perfect dessert to take to picnics, cookouts and other get togethers. They are bite size which makes them easy to grab at a party and too easy to grab every time you walk by them at home πŸ™‚ I like to make these in the Winter too when Continue reading

Paleo Inspired Chocolate Brownies

I don’t follow the Paleo diet, but a friend of mine at work shared this recipe with me and she makes delicious desserts so I trusted it was a good idea to give it a whirl! Good idea indeed, because these are yummy little treats! If you’re not familiar with Paleo, it puts focus on eating leanΒ meats, fish, vegetables, fruit, and excluding dairy/grain products and processed food. So these brownies have no flour, no refined sugar; instead, Continue reading

Garden Style Lasagne

So here’s how this one has gone….I pinned a recipe for Vegetable Lasagne, kept looking at it from time to time and this weekend (several months later) finally decided to spend the needed time in the kitchen to make it. Sometimes the number of steps in a recipe can be a bit intimidating, but once you break it down and actually go through the process it’s nothing too complicated, just time consuming. Yesterday it snowed pretty much all day (I think we ended up with about six inches of snow on the ground) so it was the perfect Saturday to do some Continue reading
